Contact Stephanie at 385-646-4212 to confirm receipt.Job SummaryManages the day to day industrial scale food production taking place at Granite Schools District s central kitchen. Oversees staff responsible for preparing, handling, packaging, storing, and preparing foods for distribution to schools serving students participating on the various child nutrition programs. Review and assess production operations and perform quality control on finished products to ensure quality and quantity control standards are consistently met. Confers and cooperates with management personnel in formulating administrative and operational policies and procedures. Directs and coordinates activities of operations department to obtain optimum use of equipment, facilities, and personnel. Overview of common functions and responsibilities: Provide daily supervision to Assistant Production Managers as well as general oversite of production activities to ensure quality assurance of foods produced. Create and approve work schedules for production employees; schedule and approve time off requests; ensure time off and hours worked are entered correctly. Evaluate work performance of employees. Provide input and assist with personnel actions including hiring, disciplinary action, discharge, performance evaluations, etc. Recommend and-or provide necessary training to Assistant Production Managers as well as production employees. As needed coordinate and track completion of training. Inspect employees as well as production, service, and storage areas to sanitary standards are met. Requisition, and monitor inventory and condition of foodstuff, supplies, and equipment to ensure optimum and efficient operation. Recommend expenditures for the acquisition of new supplies and equipment that would increase efficiency and safety of operations. Provide training and enforce compliance of operations personnel with administrative policies, procedures, safety rules, and governmental regulations. Work with district Chef-trainer on developing, scaling, and refining new and existing recipes for use in the food service operation. Use district food service management software to create and document daily production, manage recipes, monitor kitchen inventory levels, and ultimately fulfill orders submitted by supported schools. This position will also require the daily food service management software and other software such as Microsoft Office web based and desktop tools (Teams, Word, Excel, PowerPoint, Outlook,) as well as other applications including but not limited to Google Chrome and Drive, Adobe Acrobat, and district software applications for payroll and performance management. Essential FunctionsManage the daily operations of a large central kitchen operation including preparing, handling, packaging, storage, and distribution of food in large quantities; review and assess production operations and finished products, and ensure quality and quantity control standards for food production are met.Evaluate, track, and assess menu to determine food, equipment, and staffing requirements needed to meet production demands; develop daily production schedule, make production assignments, and determine priorities.Inventory food products, supplies, and equipment periodically to ensure availability of items required for meeting projected menu requirements; review District inventory management system to assess inventory levelsProvide direction and leadership to Assistant Production Managers as well as general oversite of production activities to ensure quality assurance of foods produced.
