SUMMARY: The Director of Catering is primarily responsible for developing and implementing the total sales and marketing strategies of the catering department, including securing new accounts, maintaining existing accounts, and executing sales and marketing tactical plans. S/He will maximize the profitability of the hotel while maintaining guest satisfaction.


  • Maintain complete knowledge of and comply with all departmental policies/service procedures/standards.

  • Maintain positive guest relations at all times.

  • Plan, develop, and monitor policies and goals to maximize employee productivity and efficiency while minimizing turnover.

  • Prepare, allocate, and manage the catering budget.

  • Assist management in the preparation of the annual departmental operating budget, and financial plans which support the overall objectives of the hotel

  • Direct the day-to-day activities of the catering team.

  • Establish client base of organizations, associations, and commercial business through direct outside sales efforts for the purpose of securing business for the hotel.

  • Arrange all details of conventions and or catering events to include room set-ups, staging, lighting, audiovisual, traffic flow, menus, décor, entertainment, group room blocks, VIP services, and approved method of payment.

  • Accurately produce and/or review all sales contracts, rate agreements, and/or catering event orders.

  • Develop, train and motivate a catering team that is responsible for developing new accounts, maintaining existing accounts, and implementing catering strategies to achieve catering revenue goals and maximize profits for the hotel, while maintaining guest satisfaction.

  • Negotiate food and beverage prices, function space, and hotel services within approved departmental booking guidelines.

  • Work closely with Executive Chef on menu design and concepts pricing for catering events.

  • Identify operational problems that impact the effectiveness of overall catering sales performance and work closely with appropriate Departments on solutions.

  • Plan and conduct pre-event and post-event meeting with clients, guests, and catering staff.

  • Promote teamwork and quality service through daily communication and coordination with other departments.

  • Adhere to hotel requirements for guest/employee accidents or injuries and in emergency situations.

  • Perform other duties as assigned.


  • High school diploma or equivalent

  • Bachelor’s degree in Marketing or related field

  • Three years of experience in a catering setting or related field

  • Supervisory experience preferred in sales/catering environment

  • Basic knowledge of Microsoft Office

  • Willingness and ability to promote a positive team member culture and core values

  • Must speak fluent English

  • Fluency in other languages beneficial


  • Must be a United States citizen or possess a valid work permit

  • Must be able to read, write, and speak English

  • Must have exceptional communication skills

  • Must be able to accurately follow instructions, both verbally and written

  • Must have basic computer skills including Microsoft Office

  • Mathematical skills, including basic math, budgeting, profit/loss concepts, percentages, and variances are utilized frequently

  • Must be detailed orientated and work well under pressure

  • Must be able to work in a fast paced environment

  • Must be professional in appearance and demeanor

  • Ability to work a flexible schedule that may include evenings, weekends and holidays

  • Must have the ability to deal effectively and interact well with employees

  • Must have the ability to resolve problems/conflicts in a diplomatic and tactful manner

  • Possess strong motivational, organizational and verbal communication skills

  • Ability to travel to attend workshops, tradeshows, conventions, etc.

  • May require a Driver’s License


  • Must be able to sit for long periods of time

  • Must be able to frequently stand up or move within and outside the facility

  • Must be able to carry or lift items weighting up to 25 pounds

  • Must be able to perform simple grasping, fine manipulation, and repetitive hand & arm movements consistent with office work

  • Must be able to frequently handle office supplies and equipment to maintain the facility
